How involved can I be in the process?
As involved as you like. Some artists like to be in the room for every decision, others prefer to send a brief and get updates along the way. Either works.
Is Forensic Sample Recreation legal?
Recreating a sample from scratch, rather than using the original recording, means you're not using someone else's master, which is usually the part that needs clearing. It's always worth checking with a music lawyer for your specific case, but recreation is the standard way artists work around a sample that can't be licensed.
